Creamy Raspberry Chia Breakfast Bowl





Breakfast really is the most important meal of the day. Don't let anyone tell you otherwise.


It is the first meal we eat after fasting during sleep. It is important when breaking the fast (get it... break-fast), to provide the body with a ton of nutrition so we can feel great and have steady energy throughout the day!


I don't know about you but my mornings can sometimes be a little hectic, and often times preparing breakfast is the last thing I have time for.


That is why I am always searching for yummy, nutrient filled breakfast ideas that I can prep in advance and simply grab in the morning.


This recipe is exactly that. It combines highly nutritional ingredients and can be prepped in advance and stored in the fridge for 4-5 days!


I typically will make 4-5 of them at a time and keep them in the fridge for breakfasts for the week. This recipe is loaded with protein, fiber and high quality fat to keep you full and satisfied for hours.


Makes 1 bowl/jar


Ingredients:

3 tbsp chia seeds

3/4 cup nut milk ( I recommend using unsweetened coconut milk, but any nut milk will work)

1/4 teaspoon sea salt

1/4 cup frozen riced cauliflower

1/2 teaspoon vanilla extract

1 scoop collagen powder

1 teaspoon honey (optional)

1/4 cup raspberries


How To Prepare:


  1. In a bowl or glass jar, combine the chia seeds, nut milk, salt, riced cauliflower, vanilla extract, collagen and honey.

  2. Mix really well using a fork or whisk. Make sure to break up the chia seeds.

  3. Chill in fridge for at least 1 hour but overnight is best.

  4. When ready to eat, top with raspberries.

  5. Enjoy!
