Pumpkin Energy Bites

Nothing screams Fall more than pumpkin flavored anything. The weather is cooling down, the air feels crispy, pumpkin is making its appearance on all the menus. I am always so inspired to make fun, healthy recipes with pumpkin and I know you will love this one!
These little snacks are healthy, full of good nutrition, simple to make and so yummy!
These pumpkin energy balls are slightly sweet, chewy and delicious. No baking required, and you can freeze them for 2-3 months!
Makes 12 balls
Ingredients:
1 cup old fashioned oats
1/2 cup walnuts
1/4 cup pitted dates
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice (combo of nutmeg, clove, ginger)
1/2 can of pumpkin puree
1 teaspoon vanilla extract
2 teaspoon honey
1/2 cup dairy free chocolate chips (optional)
How To Prepare:
In a food processor, grind up walnuts and dates to form a course paste.
Add in oats, cinnamon, pumpkin pie spice, pumpkin puree, vanilla extract and honey and pulse until combined.
If using chocolate chips, stir them in at the end.
Refrigerate the mixture for 20-30 minutes to stiffen up a bit.
Remove from fridge and roll into 1 oz size balls place on a plate or a cookie sheet.
Return the balls to the fridge to set for another 30 minutes before eating.
Keep refrigerated in an airtight container- eat within 1 week.
To freeze: store in an airtight container for 2-3 months.
