I love using seasonal produce in my meals. Nothing beats the freshness and taste that seasonal product provides. Fall is a great time of year for squash! I used to be very intimated by squash but have found it to be super simple to prepare, so delicious and loaded with awesome nutrition.
I am big fan of butternut squash! It has a sweet nutty taste similar to pumpkin. Butternut squash is naturally low in calories, and fat free. It is a great source of dietary fiber, loaded with Vitamin A, Vitamin C, Magnesium and Potassium. It's a great option to help improve immunity and great for eye health. Combined with a hight quality protein and fat, Roasted Stuffed Butternut Squash is a nutrient packed meal that is simple to make, delicious and will keep you feeling full for hours.
Makes 2 Servings
1 lb ground turkey
1 butternut squash
2 tablespoons olive oil
1 onion diced
3 garlic cloves, minced
4 mushrooms, chopped
6 oz can tomato paste
1/4 cup chicken broth
2 bell peppers, diced (can choose any color, I used red and green)
1/2 teaspoon Italian seasoning
1/2 cup parmesan cheese, grated
salt and pepper to taste
How to Prepare:
Preheat oven to 400 degrees.
Cut butternut squash into halves and remove seeds with a spoon.
Line a baking tray with parchment paper and lay the butternut squash halves cut side down . Roast for 30 minutes.
Meanwhile, heat 2 tablespoons olive oil in a skillet. Add the ground turkey, cook until brown.
Add the onion, garlic and mushrooms. Cook until softened.
Add the tomato paste, bell pepper, seasonings and chicken broth. Stir to combine well and bring to a simmer on medium heat for about 15 minutes.
Once butternut squash is roasted, remove from oven and scoop out more flesh to make room for the stuffing.
Stuff the butternut squash halves with the turkey mixture and top with parmesan cheese.
Return to the oven and cook for 10 more minutes.
